Healthy-licious Oatmeal Cookie Recipe

I've served these to several friends who couldn't believe they were gluten-free and free of refined sugar. They gobbled them right up!

Ingredients

  • 2 ripe bananas
  • 1/4 cup roasted almond butter or peanut butter
  • 1/4 cup coconut oil melted
  • 1 TBSP Vanilla
  • 1 cup Gluten-free rolled oats OR GF steel cut oats
  • 1/3 cup Gluten-free flour or baking mix eg: Bob's Red Mill GF Baking Flour
  • 1/3 cup protein powder eg: Pea Protein or Rice Protein
  • 1/4 tsp baking soda
  • 1 TBSP cinnamon
  • 2 TBSP organic cocoa powder optional
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup raisins
  • 1/4 cup chopped almonds pecans, walnuts, peanuts or other nuts (optional)
  • 1/4 cup dark chocolate chips optional (I used fair-trade, organic 70% bitter-sweet chips)

Instructions

  • Preheat the oven to 350°, and lightly grease a cookie pan with coconut oil.
  • In a medium-sized bowl, mash the 2 bananas, and add in the almond butter, melted coconut oil, vanilla, and mix thoroughly.
  • In another medium-sized bowl, combine the GF oats, GF flour, protein powder, baking soda, cinnamon, and cocoa powder. Mix until combined well.
  • Pour the dry ingredients into the bowl with the bananas, and mix well. Fold in the shredded coconut, raisins, nuts, and chocolate chips.
  • Drop by tablespoonfuls onto a cookie sheet, about 1" apart. Bake at 350° for 14 minutes. Makes 18 healthy-licious oatmeal cookies.
  • Each cookie contains only 4 grams of sugar, most of it naturally occurring from the bananas, raisins, almond butter, oats, (and chocolate chips if you use them.)
