Preheat the oven to 350°, and lightly grease a cookie pan with coconut oil.
In a medium-sized bowl, mash the 2 bananas, and add in the almond butter, melted coconut oil, vanilla, and mix thoroughly.
In another medium-sized bowl, combine the GF oats, GF flour, protein powder, baking soda, cinnamon, and cocoa powder. Mix until combined well.
Pour the dry ingredients into the bowl with the bananas, and mix well. Fold in the shredded coconut, raisins, nuts, and chocolate chips.
Drop by tablespoonfuls onto a cookie sheet, about 1" apart. Bake at 350° for 14 minutes. Makes 18 healthy-licious oatmeal cookies.
Each cookie contains only 4 grams of sugar, most of it naturally occurring from the bananas, raisins, almond butter, oats, (and chocolate chips if you use them.)
