Tequila Lime Baja Shrimp Tacos

Ingredients

  • 1 lb wild-caught shrimp peeled and deveined
  • 2 oz lime juice divided in half
  • 2 oz tequila
  • 2 tbsp organic olive oil
  • 4 garlic cloves crushed
  • 1/4 tsp ground cumin
  • 1/4 tsp Himalayan sea salt
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp crushed red pepper flakes
  • 3 tablespoons chopped cilantro garnish
  • 12 fresh corn tortillas, warmed

Taco Condiments

  • 2 cups shredded cabbage, (purple is pretty!)
  • 1 large tomato, diced
  • 1 avocado, diced
  • 4 limes, quartered
  • favorite hot sauce or salsa

Instructions

  • Mix together 1oz lime juice with the tequila, olive oil, garlic, and spices. Marinate the shrimp for 1+ hours. The lime and tequila will partially “cook” the shrimp.
  • Heat a large cast-iron skillet over high heat. Add shrimp and marinade to the pan, and cook for about 2-3 minutes, stirring and turning shrimp until well heated and thoroughly cooked.
  • Remove from heat and sprinkle with the remaining 1 oz of lime juice and the chopped cilantro. Toss well
  • Make DIY Baja Shrimp Tacos with warm corn tortillas, shredded cabbage, diced tomatoes, diced avocado, and a squeeze of lime. Buen provecho!
